B. Smith Cooks Southern-Style, by Barbara Smith

From Publishers Weekly

Southern cooking—both contemporary and traditional—may be having its moment, and it gets a friendly cookbook treatment from a celebrated African-American lifestyle restaurateur. While Smith has authored two books on entertaining and operated her iconic B. Smith restaurants in New York; Washington, D.C.; and Long Island for years, she actually considers this her cookbook debut, which she says, was inspired by her desire to share her love of Southern food while giving it an update. Chapters follow traditional categories such as brunch, appetizers, meat and so on. Interspersing recipes with facts about their historical or personal origin, Smith introduces readers to the nuances of the region's cuisine, from Carolina low country's shrimp and grits to the Cajun maque choux of Louisiana. (For any readers who ever wanted to attempt turducken at home, Smith has a multipage explication.) The contemporary spin comes in the form of eggplant fries with tomato truffle ketchup, sweet potato salad with orange-maple dressing, and chocolate chip dessert sliders. Where possible, she has substituted healthier renditions, eliminating fatty meats or reducing sugar. Smith tops it off with a chapter devoted to beverages, including a number of interesting cocktails (pistachio margarita-tini and strawberry sangria with rose geranium), which, in keeping with her home-entertaining pedigree, will get the party started. Throughout, Smith remains an affable host, keeping the proceedings accessible and fun. (Nov.) Copyright © Reed Business Information, a division of Reed Elsevier Inc. All rights reserved.

B. Smith's breezy anecdotes about her own life and bits of history about the recipes make this a fun book to read. Although I am not from the South, I have an interest in Southern cooking and I am blessed with a friend whose New Orleans born mother-in-law taught her how to make some of the best dishes I've ever had.Very few recipes for Red Beans and Rice can compare to my friend's - which is most certainly not made with canned beans and has the added lagniappe of pulled smoked pork thrown in - including the one in this book. But B Smith's version is very short on cooking time and pretty long on flavor nonetheless. Not all of the recipes are shortcuts, though; the Turducken recipe takes a few days to complete. The book is not without some nice twists to standard recipes here. For instance, the addition of mascarpone cheese elevates simple Cheese Grits to something altogether sublime. And there's a fabulous Cioppino recipe (add a dash of Pernod to each bowl if you really want to hit it out of the park) which is delicious even though I don't really understand what makes it Southern-style.There are some great, fun and classic cocktail recipes in this book, as well as several dishes for holiday meals. I was somewhat disappointed in the quality of the book. The paper is so thin that some of the too numerous black and white photos could be seen through to the other side of the page. But this is a largely enjoyable book with many good recipes, even though it might not be 100% "authentic."

Very unique twist on down home southern dishes. I presented this book as a gift to a family relative who loves to cook. I had the distinct pleasure of eating at her establishment in Manhattan before it closed. The experience of eating such delicious food and conversing with such a gracious and beautiful hostess will never be forgotten. May GOD be with B. Smith in her fight. She's in our hearts and prayers.

Entertaining stories Combined with southern style and the best recipes around. Each recipe is well-explained and tastes great! I really love her interpretation of some of my favorite cuisine!

I have tried four recipes since I bought the book and we enjoyed each one. Very glad I bought the book as I have read that Barbara is ill now, so I will treasure her collection in this book.

Have you ever read a cookbook to your child at bedtime for a bedtime story?Well, I not only use B. Smith's Cookbook in my kitchen, but, i've been known to bring it in my living room, in our bedroom, on the family ride.. and to read to our child at bedtime. Yes.. it's that beautifully, deliciously, warmly written. One can't help but hear the sparkle of Barbara [B.] Smith's voice amongst the pages. It is as if she's like a great sister-friend or neighbor, or fun cousin whom one would have in her kitchen while preparing meals. B is so personable in that her written words lift from the pages to help me be successful in making similar delicious recipes found at her restaurants.. bringing them home to my own family. This is a wonderful book!!! more than a cookbook!..If I want to give a great gift to someone I order B's cookbook, go to B, B, & B get one of her bath or home products, and go to the grocery store to get her EVO and cornbread mix.. talk about an awesome gift to give!. The recipients have been overjoyed.I can't say enough about B. Smith and her books. I pray she continues to write more.

Former Supermodel, forever beautiful and brilliant businesswoman, and more, Barbara "B. Smith" deliciously serves up more to her readers than simply giving a cookbook. Always in all she does, with B. Smith signature style, this phenomenal lady truly puts herself into her writing. The reader can "hear" B. Smith sharing a recipe and feel as if B.'s right there in the grocery store and in the kitchen. B. "tames" recipes... (even alligator!).. and makes exquisite, good looking, great tasting foods as in her many restaurants, accessible and doable for all stages of cooks in their home kitchens.I am proud of Pittsburgh native, B. Smith. I want to read other of her books and to see her soon appear in a local area grocery store to promote her book. I'm bringing my book for her to sign. (Won't be a difficult task. Her truly delightful and enjoyable cookbook is with me daily.)Update: 11/28/2010.. I've bought more copies to give as gifts to loved ones.. B's cookbook is THAT good!!!!

Great book. I sorely miss her talents.

great

Review

“Great coaches and teachers relentlessly strive for learning and improvement—in their people, in their teams, and in themselves. John Cook’s story is permeated with that pursuit: what an innovator! If you crave the ‘better,’ you’d better read this book.”—Karch Kiraly, head coach, U.S. women’s National Volleyball Team (Karch Kiraly 2017-02-24)“The thing that strikes me the most about John Cook is the amount of thought and energy he gives to every possible detail in coaching. John’s reflection about his own coaching and the Nebraska program frequently leads to action, which is how both an individual and a program stay ahead of the game. This is a very good book for anyone who has an interest in coaching and leadership.”—Terry Pettit, head coach, University of Nebraska women’s volleyball team, 1977–99 (Terry Pettit 2017-02-24)“John Cook has accomplished nearly everything a volleyball coach can achieve. He has done this not by focusing just on recruiting great players or the physical skills of his players. In Dream Like a Champion John reveals his relentless quest for better team chemistry, improving communication skills, proper goal setting, and attention to detail—which together result in peak performance.”—Tom Osborne, former Husker head football coach, University of Nebraska athletic director, and U.S. congressman (Tom Osborne 2017-02-24)“Courage is the word that comes to mind when I think of Coach John Cook. Over the years I’ve seen John continually show courage, but never more than when he acknowledged his need to reinvent himself and manage stress. His willingness to share that about himself and to be open to others is one of the most courageous things I’ve seen done by a coach, or by anyone, really, in all my years as a sports psychiatrist.”—Larry Widman, co-founder of Performance Mountain (Larry Widman 2017-02-24)"If you're a Nebraska volleyball fan you should own this book."—Jon Johnston, Corn Nation blog (Jon Johnston Corn Nation 2017-12-12)"For all coaches and people who bleed Husker red, this a great read. . . . Cook admires the special qualities that can come from a small-town Nebraska athlete; other coaches across the state have taken notice, too. These athletes are generally family oriented, hardworking, and possess good qualities that help lead to championship cultures. That's the Nebraska way, and John Cook reveals how he understands the value these athletes can bring to his program."—Nicole Venditte, Great Plains Quarterly (Nicole Venditte Great Plains Quarterly)“John Cook had an unconventional path into coaching. He has incredible insight into building champions on and off the court. His growth mind-set and ability to constantly develop new leadership skills make him a special breed of coach.”—Jack Riggins, co-founder of Performance Mountain, retired U.S. Navy SEAL, and assistant football coach at Midland University (Jack Riggins 2017-02-24)

I'm sure the book is great (just like Nebraska volleyball!) but it didn't include the chapter of the 2017 National Championship team which was pictured. I will definitely reorder it when I am assured of getting the additional chapter! GO BIG RED!!!

Great read! What a work ethic Cook has. He knows what type of people he has to surround himself and the team with to build a # 1 program. It’s amazing how you really have to have team chemistry to win a national championship.

I enjoyed reading this book so much! But I’m also a huge John Cook fan as his teams & players don’t have to yell & get all worked up, but play with a quiet confidence that leads to them winning. I think it’s great he was willing to share some of the inside info of Nebraska vball.

Fascinating book. Must read for all volleyball,or sport fans. Lots of interesting inside information. Hard to put this one down so reading it only took two days.

great insight into a premier college volleyball program in the nation.

Leisure reading for me.

Great book for coaches or leaders!

A great biography of Coach John Cook!Very well written by Brandon Vogel!

Bridges: A History of the World's Most Famous and Important Spans, by Judith Dupre Frank O. Gehry

Amazon.com Review

In her follow-up to Skyscrapers, Judith Dupré has taken her initial concept and turned it on its side. Bridges, like its predecessor, is a large-format hardcover book that opens to an impressive span a yard across. The format lends itself well to the material, displaying the many exquisite panoramic shots of bridges in full splendor. The impressive black-and-white photographs convey the majesty, elegance, and beauty of these structures. Bridges is more than a picture book, however. Dupré presents a chronological collection of more than 45 bridges, from early Roman aqueducts to the most recent accomplishments of this century. Each bridge is accompanied by text that, together with the photos, provides the reader with informative background, anecdotes, and cultural and historical context. For fact seekers, the relevant names and numbers are readily accessible. For the parents of inquisitive children, "cantilever" will roll from the tongue as easily as "tension" and "torsion." Dupré quietly proclaims in her introduction, "The unassuming poetry of bridges reveals itself to those who would see them." The author manages to convey this very poetry by giving us the tools to understand the power and grace of the bridge.

Review

Judith Dupre captivates the eye, mind and imagination in this ode to the greatest spans and cantilevers of the world. Admittedly fascinated by the way bridges weave in and out of the fabric of life, Ms. Dupre chronicles their history from the magnificent Roman aqueduct Pont du Gard, built in 18 B.C., to the longest suspension span in the world, the Akashi Kaikyo Bridge of Japan, to be completed next year. Published in October as a sequel to Skyscrapers, which was released last year by Black Dog & Leventhal and sold 250,000 copies, the book's appearance is as unusual as some of the bridges discussed. Measuring 18 inches wide and 7 1/2 inches high, the hand-bound book opens to a yard across. Viewing books as objects. Ms. Dupre collaborated with the book designer Allison Russo on its striking format. Black and white photographs accompany informative essays on 47 bridges, which encapsulate the longings, hope and genius embodied in each structure. -- Ireen E. Kudra, New York Times, December 7, 1997Quick: Name two famous bridge engineers. Can't do it? You're not alone. Although some of these leaps of wood, stone or steel are beloved icons, their creators have been largely forgotten. Who, for instance, recalls Thomas Telford, notable for having raised the first major suspension bridge in Scotland? Or Othmar Ammann, the Swiss-born designer who gave New York City six of its skyline-enhancing spans was? If Judith Dupre has done nothing more in this well-illustrated volume than resurrect the memory of such influential builders, it would still be commendable. But Bridges, the playfully extra-wide sequel to her extra-tall Skyscrapers, is both a tribute and a trivia trove. History-minded travelers will enjoy learning that London's Tower Bridge was disparaged as "the most monstrous and preposterous architectural sham" when it was completed in 1894. Equally fun is the tale of French King Henry IV who was so pleased with Paris' Pont Neuf that he leapt its entire length from pier to pier while the bridge was still being built. -- J. Kingston Pierce, Historic Traveler, February 1998

Great book. However this copy was not "very good condition" as the binding of the book was loose and so the top cover would slide up and down while the bottom cover remained stationary. This was my second copy of the book, my previous copy was "good" condition, but was actually much nicer than the "very good condition" version. Disappointing, but the work done to create the book is wonderful.

Covers all the major, famous bridges in wonderful detail.Too bad it appears to be out of print! If you find a reasonably priced copy in good condition it is definitely worth purchasing.

I love this book! It is well written and interesting. The pictures are wonderful.

Gift for a friend who thought it was very comprehensive/

Had seen this book before and wanted a copy for myself. Excellent and informative.

The condition of the book overall was good. I was a little upset about the torn cover and the fading of pages. I had purchased this book as a gift for a friend who loves bridges. He was pleased and happy so nothing else mattered. This book makes a great coffee table book and it has tons of information. I didn't realize every picture was in grey scale, had some color been added I think it would have been much better.

All of the author's books are well researched accompanied by wonderful photography.

great book - excellent condition thank you
